Almond Lace Cookies
Almond lovers BEWARE! These thin little crisps are like explosive almonds in your mouth.
While I'm not a cookie lover, I am a nut lover. HAHA (sorry husband). These cookies come out so thin and crunchy and are packed with a punch of flavor. I adapted the recipe from the Cookie Bible with my own twists of course.
Ingredients:
1/4 cup of butter
1/2 cup of granulated sugar
1/2 cup of Almonds
1 tsp of Almond Extract
2 tbsp of milk
3 tbsp of all purpose flour
Directions:
1. Preheat oven to 375 degrees.
2. Measure out 1/4 cup of Almonds
3. Place them in a food processor and grind into fine pieces. Alternatively, use a knife to chop into fine pieces.
4. Take a 1/4 cup of butter and melt in a small pot
5. Once butter is melted, remove the pot from the heat, and mix in the sugar, flour, nuts, almond extract, and milk.
6. Line a baking sheet with parchment paper and properly oil the paper with Pam Spray or butter.
7. Drop about 1 tsp of the dough onto the baking sheet, about 2 inches apart.
8. Bake for 5 minutes.
9. Let cool before eating - be careful how you set them after they come out of the oven.
There you have it - the key to Almond heaven.
